Seafood pizza
- Preparation time 20 minutes
- Cooking time 30 minutes
- Serves 2-4
Ingredients
- One 30 cm round pizza base, or four 15 cm individual bases
- 1/3 cup pizza sauce
- 1 red onion, finely sliced
- 1 small green capsicum, finely sliced
- 100 g peeled prawns
- 100 g scallop meat
- 150 g mussel meat
- ½ cup grated low-fat mozzarella cheese
- chopped parsley
Method
- Preheat oven to moderately hot (200°C or 400°F).
- Spread pizza sauce over the base, leaving a 2 cm wide gap around the edge.
- Scatter onion and capsicum over the base.
- Top with prawns, scallops and mussels.
- Sprinkle with cheese.
- Place pizza on an oven tray (you can slide it directly onto the oven shelf but it can be difficult to remove when cooked).
- Bake for 30 minutes or until base is crisp and cheese melted.
- Top with chopped parsley.
HINT: You can also use 350 g of prepared marina mix purchased from the supermarket or fish to replace the individual seafood ingredients
