Club sandwich

Ingredients
- 8 thick slices wholemeal bread, toasted
- 4 thick slices rye bread, toasted
- 3 tablespoons low-fat mayonnaise
- 8 baby cos lettuce leaves
- 150 g barbecued chicken (white meat only), or shaved strips of cooked low-fat turkey breast
- 4 slices reduced-fat cheese
- 1 large tomato, sliced
- 50 g shaved reduced-fat ham
- 1 Lebanese cucumber, cut into very thin strips lengthways
Method
- Trim crust off bread.
- Lightly spread with mayonnaise.
- To assemble, place lettuce leaves on wholemeal bread slices, top with chicken, followed by a slice of rye bread, cheese, tomato, ham and cucumber.
- Finish with wholemeal bread.
HINT: This also tastes great when toasted bread is used
